Thai Lettuce Wraps

  • 1 head of Iceberg or Butterhead lettuce, leaves separated
  • 1 red capsicum, sliced into thin strips
  • 1 yellow capsicum, sliced into thin strips
  • 1 green zucchini, julienned
  • 2 carrots, julienned
  • Snow peas, julienned
  • Bean sprouts, trimmed
  • Fresh cilantro and Thai basil leaves
  • 1 lime, cut into wedges
  • For the Lime Chili Peanut Sauce
  • 1/4 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 2 tsp maple syrup
  • 1 tsp sriracha
  • Juice of 1 lime
  • 2-3 tbsp warm water, to thin
  • For the Filling
  • 1 tbsp sesame oil
  • 3 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1-inch ginger, grated
  • 1 block firm tofu, drained and pressed, then crumbled
  • 1/4 cup chopped salted peanuts
  • Salt and pepper, to taste

Instructions

  1. Prepare the Lime Chili Peanut Sauce by whisking together all the ingredients in a bowl. Adjust consistency with additional water if needed.
  2. Heat the sesame oil in a large skillet over medium-high heat. Add the garlic, onion, and ginger and sauté for 2-3 minutes, until fragrant.
  3. Stir in the crumbled tofu and cook for 5-7 minutes until heated through and slightly browned.
  4. Add the chopped peanuts and season with salt and pepper to taste.
  5. To serve, spoon the tofu filling into lettuce cups and drizzle with the Lime Chili Peanut Sauce. Top with fresh herbs, a squeeze of lime, and enjoy!
