The Spicy Black Bean and Corn Enchilada Recipe
Ingredients (Serves 4):
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) sweet corn, drained
- 1 cup diced onions
- 2 cloves garlic, minced
- 1 jalapeño pepper, diced (seeds removed if less heat is desired)
- 2 cups spinach, chopped
- 2 cups vegan cheese, shredded
- 8 corn tortillas
- 2 cups verde enchilada sauce
- 1 tbsp olive oil
- 1 tbsp chili powder
- Salt, to taste
- Fresh cilantro, for garnish
Instructions:
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add olive oil. Add onions and cook until they turn translucent. Add garlic, jalapeño, chili powder, and a pinch of salt. Saute for another minute.
- Stir in the black beans and sweet corn. Cook for an additional 5 minutes.
- Prepare an 8×8 baking dish by spreading 1/2 cup of the verde enchilada sauce over the bottom.
- Warm tortillas according to the package instructions to make them pliable.
- Fill each tortilla with a spoonful of the black bean and corn mixture, a sprinkle of spinach, and a tablespoon of vegan cheese. Roll tightly and place seam-side down in the baking dish.
- Once all tortillas are rolled, pour the remaining verde enchilada sauce over the top. Sprinkle with the remaining cheese.
