- 1 overripe banana
- 1 3/4 cups oat flour (you can measure oats and blend to create flour)
- 1 TBSP organic maple syrup
- 1 1/2 TBSP baking powder
- 3 TBSP unrefined coconut oil
- 1/8 teaspoon pink Himalayan sea salt
- 1 teaspoon pure vanilla extract
- 1 cup plant-based milk (soy has more protein)
- some coconut oil for the skillet
In a large bowl, mash the banana. Add the oil, vanilla, plant-based milk and stir to combine.
Add the oat flour, maple syrup, baking powder, and pink Himalayan sea salt and mix.
*You can also add all of the ingredients into a blender.
Place a little oil in a large skillet or griddle pan, and heat over medium-low heat. Once the pan is hot, spoon the batter onto the pan. Cook on low heat for 3-5 minutes.
Once the pancakes are done around the edges flip them over. Cook for about 3-4 minutes more, then remove from the pan/skillet. Repeat with any remaining pancakes.
