Potato soup

 

Ingredients:

  • 2 tablespoons olive oil
  • 3-4 sprigs of fresh thyme
  • Salt and pepper to taste

  2. Toss in the diced potatoes and mix well with the leeks, allowing them to get coated with the oil. Saute for a few minutes.
  3. Pour in the vegetable broth and bring the mixture to a gentle boil. Then reduce the heat, cover, and simmer until the potatoes are tender, about 15 minutes.
  4. Once the potatoes are soft, lower the heat and add the coconut milk, stirring to combine. Simmer for an additional 5 minutes.
