Carrot Waffles

  • 1 cup of white whole-wheat flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 tablespoon maple syrup
  • 1 cup almond milk (or other non-dairy milk)
  • 2 tablespoons vegetable oil (such as canola or coconut oil)
  • 1 cup shredded carrots (approximately 2 large carrots)


  • Once you have everything assembled, it’s time to start making the batter. Whisk together the flour, baking powder, baking soda, and salt in a medium-sized bowl. Once combined, set aside the mixture.
  • In another larger bowl, combine the maple syrup with the almond milk and oil until they are blended together.
  • Slowly add in the dry ingredient mixture while gently stirring until everything is incorporated and there are no lumps in the batter.
  • Next, fold in the shredded carrots until they are evenly distributed throughout the batter.
  • Now, preheat your waffle iron according to its instructions before lightly greasing it with oil or cooking spray if it is not already nonstick.
  • Once heated, spoon desired amount of batter onto the hot iron, close the lid, and cook for about 4 minutes until golden brown and crispy on each side.
  • Carefully remove the carrot waffle from the iron using tongs onto a plate. Repeat the process until all your waffles have been cooked.
  • Serve warm with syrup or your favorite toppings, such as fresh fruit or jam, if desired!
