  • salt to taste
  • pepper to taste
  • 2-3 tablespoons of water
  • 2 cups arugula
  • 1/4 cup Kalamata olives, pitted and sliced (optional)

Instructions

  1. Cook the pasta according to package instructions. Once al dente, drain, and set aside to cool.
  2. In a food processor, combine basil, pine nuts, olive oil, sun-dried tomatoes, garlic, nutritional yeast, salt, and pepper. Pulse until you achieve a smooth paste, adding water gradually until the pesto reaches your desired consistency.
