Sweet Potato Black Bean Chili

After a long, stressful day at work, sweet potato black bean chili is an amazingly delicious and nutritious meal and a savior to your tresses. Packed with vitamins A, B6, and C and plenty of antioxidants and other minerals, sweet potato black bean chili helps nourish and moisturize hair while protecting it from heat damage.

Sweet potatoes provide an excellent source of beta-carotene which can help repair damaged hair follicles and restore natural shine. Enjoy this tasty chili for dinner tonight for its flavor and beneficial nutrients!

Ingredients

  • 2 tablespoons of olive oil
  • 1 onion
  • 3 cloves of garlic
  • ½ teaspoon of smoked paprika
  • ¼ teaspoon of ground cumin
  • 1 teaspoon of oregano
  • 2 large diced sweet potatoes (peeled if desired)
  • 1 14.5-ounce can of fire-roasted diced tomatoes with juice
  • 1 15-ounce can of black beans (rinsed and drained)
  • 2 cups of vegetable broth
  • Salt to taste
  • For garnish: minced fresh cilantro leaves, diced avocado, and/or lime wedges

Instructions

  • Add the olive oil and onions to a large pot or Dutch oven and cook over medium heat.
  • Cook the onions until they soften but have not turned brown (approx. 3 minutes). Then, stir in the garlic and cook for another minute.
  • Stir in the smoked paprika, cumin, and oregano.
  • Add the sweet potatoes to the pot and continue to sauté for another 5 minutes or until lightly browned.
  • Then pour in the tomatoes with their juice, the beans, and broth; bring everything up to a boil before reducing the heat to low.
  • Simmer uncovered for 20-25 minutes or until sweet potatoes are cooked through, then season with salt to taste.
  • When ready to serve your sweet potato black bean chili, top it off with some minced fresh cilantro leaves, diced avocado, and a couple of lime wedges on its own for an extra protein punch!
