This crispy tofu sandwich is a delicious and nutritious way to get your daily dose of protein for your beautiful hair. This sandwich is full of flavor, texture, and provides a hearty meal for lunch or dinner that can easily be prepped ahead of time. On top of that, it’s incredibly easy to make!
Ingredients
- 1 block of firm or extra firm tofu
- Drizzle of avocado oil
- Salt (to taste)
- Pepper (to taste)
- 2 slices of sourdough bread
- 2-3 tbsp mashed avocado
- 2 lettuce leaves
- 1 sliced tomato
- 1 tsp ground black pepper
Instructions
- Start by draining the tofu in a colander and pressing it with paper towels to remove excess moisture.
- Slice the block into thin strips and arrange on an oiled baking sheet.
- Drizzle with avocado oil or another neutral-tasting oil and season generously with salt and pepper.
- Bake at 400°F for 30 minutes, flipping once after 15 minutes. The tofu should be crispy around the edges when it comes out of the oven.
- Next up is assembly! Toast two slices of sourdough bread and spread them each with mashed avocado (or whichever condiment you prefer).
- Layer the bottom slice of toast with crisp lettuce leaves, thinly sliced tomato, plenty of roasted tofu slices, and a few freshly ground black pepper turns for added flavor.
- Finally, top off your sandwich with the second slice of toast and cut in half for serving.
