Creamy Mushroom Soup

  • 4-5 cups sliced fresh mushrooms
  • 1/2 cup onions
  • 1/2 tsp finely chopped garlic
  • 1 cup vegetable broth (or water)
  • 6 tbsp coconut cream or plant-based cream
  • Salt and pepper to taste
  • 1/8 tsp dried oregano
  • 1/8 tsp dried thyme
  • You can also add other vegetables like celery or carrots if you want more flavors. With these items on hand, you’re ready to get cooking!


  • Begin by sautéing the onions and garlic in some oil until they become fragrant. This will give the soup a deep, earthy flavor.
  • Then add in the mushrooms and cook until they soften up a bit. Once the mushrooms are cooked through, remove them from the pan and set aside.
  • After that, add in the vegetable broth (or water) and bring it to a boil before reducing it to a simmer for about 10 minutes until all the vegetables are cooked through.
  • Next, stir in some coconut cream or plant-based cream into the pot and season with some salt, pepper, oregano, and thyme.
  • Then reduce the heat to medium-low and let simmer for 10 minutes or so until it reduces down by half.
  • Once everything is combined nicely, your soup is ready! Serve warm with some crusty bread on the side and enjoy!
